The Farm
Finca Los Manantiales is a 10-hectare farm managed by Esnider Rodríguez in Costa Rica’s renowned West Valley.
Esnider focuses on thoughtful and sustainable farm management, including intercropping coffee with citrus and avocado trees. His coffee is processed in partnership with Café de Altura de San Ramón, a mill known for its meticulous approach to small-farm lots.
The Process
After harvest, the cherries are carefully sorted to remove less-dense or damaged fruit. Selected cherries are then gathered into piles for an 18-hour extended fermentation before being transferred to raised beds.
The coffee dries slowly in the sun for approximately one month, until reaching about 10.5% moisture. After drying, it rests for at least another month before being hulled and carefully sorted by weight and color for export.
The result is a clean and expressive natural coffee with notes of tamarind, concord grape, candied almond, and dark chocolate.

Through Café de Altura de San Ramón, a portion of every pound exported is reinvested into the local coffee-growing community. These funds support preventative healthcare, reforestation initiatives, and assistance for families facing medical emergencies.
