Coffee Background
This coffee comes from the Santa María de Dota area of the Tarrazú region in Costa Rica. This area is known for having some of the best growing conditions in the country, with abundant sunshine, high altitude and a long tradition of coffee cultivation.
This lot is processed at the Coopedota mill, a co-op that has been operating since 1960. In 2011, it became the world’s first carbon-neutral coffee producer. The eco-pulped method they use involves removing the skin and most of the mucilage before fermenting. This results in a clean cup with vibrant acidity.
