The Origin
Sidamo is one of Ethiopia’s most celebrated coffee-growing regions, known for its exceptional elevations, fertile soils, and ideal conditions for producing expressive specialty coffees.
Coffee here is grown primarily by smallholder farmers and processed through a network of cooperatives and independent washing stations.
The combination of high elevation and Ethiopia’s remarkable genetic diversity produces coffees known for their floral aromatics, vibrant acidity, and delicate sweetness.
The Process
Freshly harvested coffee cherries are carefully hand-sorted, washed, and floated to select fruit with consistent density before being depulped.
After washing, the parchment coffee is spread in thin layers across raised beds and sun-dried for approximately 2–3 weeks.
Throughout the drying process, the coffee is continuously turned to encourage slow and even drying. It is also covered during the hottest part of the day and overnight to protect it from excessive heat and humidity.
This meticulous washed process creates an exceptionally clean and vibrant cup with notes of peach, lemon, florals, warm spice, and candy-like sweetness.
